Kitakata Ramen
Originated in Kitakata City (which is my mom’s home town), I grew up eating this type of ramen before it became popular in Japan. Now I can find a Kitakata ramen shop in Kawasaki City! Thick wavy noodles in simple yet flavorful soy based broth are usually topped with multiple slices of chashu (braised pork), shinachiku (fermented bamboo shoots) and green onions.
