This Oaxacan food is sometimes open faced, sometimes folded, but it is always super crunchy – Oaxaca, Mexico
Tejate
Tejate (regional fermented cacao and maize drink). Looks like fungus is growing on top but it’s flor de cacao and the texture is more like solid cream. I drink tejate almost daily! Traditional serving bowls are always available (3rd photo) but I usually just get the to-go version – Oaxaca, Mexico
