Kitakata Ramen

Originated in Kitakata City (which is my mom’s home town), I grew up eating this type of ramen before it became popular in Japan. Now I can find a Kitakata ramen shop in Kawasaki City! Thick wavy noodles in simple yet flavorful soy based broth are usually topped with multiple slices of chashu (braised pork), shinachiku (fermented bamboo shoots) and green onions. Akebi (also known as chocolate vine)

They are about the size of small mangos.

When I was growing up, they were only available in the wild and I’ve only heard of them from my mom who grew up in the country. Now they are available at grocery stores (but still rare)! The gooey part around the seeds is the main sweet/edible part. This was my first time eating them. To be honest, the taste is just ok but it’s different and pretty to look at! – Kawasaki, Japan
